Six weeks of daily meal prep and the edge is still gliding through tomatoes without crushing them, which says a lot for a knife in this price range. The soft-grip handle makes mincing garlic a pleasure instead of a chore, and the bolster gives my fingers a natural stopping point that feels secure.

I was surprised by how well-balanced this knife feels—the bolster keeps my hand from slipping even when chopping through a big pile of onions. It made dicing vegetables for stir-fry noticeably faster than my old chef's knife.
